How do invisible microbes turn plain milk into hundreds of kinds of cheese?

Pour yourself a glass of milk and it is smooth, white and mild. Yet the same milk can become crumbly cheddar, blue-veined stilton or stretchy mozzarella. Nobody pours those hundreds of flavours in from a bottle. So what turns one plain liquid into so many different cheeses?
