How does a salt or sugar crystal grow?

Stir salt into warm water and it vanishes completely; the water looks clear and empty. Leave that water out for a few days and something strange appears: solid, glassy crystals, growing right out of nothing. The salt didn't disappear, and it didn't reappear by magic. So how does a crystal build itself out of clear water?
