How does an octopus vanish by turning the colour of the rock it sits on?

An octopus glides over a rock, and in less than a second it seems to melt away. Its skin turns the exact grey, brown and speckle of the stone beneath it, as if it had dipped itself in the rock's own colour. It carries no crayons and has no mirror to check itself.
