What do enzymes actually do?

Your body breaks down a whole meal in a few hours. Yet leave that same food sitting on a plate at body temperature and it would take days, even weeks, to break down on its own. Somehow your cells do the same chemistry thousands of times faster, without getting any hotter than your own warm 37 degrees. The secret is a tiny helper called an enzyme. But what does an enzyme actually do?
