How can scientists actually rewrite the instructions inside a living thing?

Every living thing runs on a hidden set of instructions, tucked inside its cells, that decides how it grows. Farmers have nudged those instructions for thousands of years by choosing what to breed. But changing one deliberately, on purpose, in a chosen spot? That is genuinely new. How on earth do you change the instructions inside something that is alive?
