Why do crystals have such perfect flat faces and sharp edges?

A salt grain under a magnifier, a quartz point, a sugar crystal: they all have weirdly perfect flat faces and crisp straight edges, like tiny gems someone cut by hand. But nobody carved them. So how does a lump of plain matter end up with such neat, machine-perfect shapes all on its own?
