Why do people call forests the lungs of the planet, worth protecting everywhere?

People sometimes call the great forests the lungs of the planet, and say we must protect them wherever they grow. That is a big claim for a crowd of trees standing quietly in one place. What could a forest possibly do that matters to the whole world, even to people living oceans away?
