Beyond somewhere to stand, why do most plants really need soil?

It is easy to think soil is just a place for a plant to plant its feet. But try growing a flower in a jar of clean pebbles: it has plenty to grip, yet it still weakens and fails. So what is it about real soil that a plant cannot live without?
