Why do some children have an allergy when young, then lose it as they grow?

When you were tiny you might have had an allergy, perhaps to eggs or milk, that made you poorly. Then, a few years later, it simply faded away, and now you can tuck in with no trouble at all. Your body seems to have quietly changed its mind. How does an allergy just disappear as you grow up?
