Mystery #3Tier 2food / molecules / cooling
Why does warm liquid jelly turn into a firm wobble in the fridge?
You stir jelly crystals into hot water and get a warm, runny liquid you could almost pour like a drink. Leave it in the fridge for a few hours and it turns into a firm, bouncy wobble you can cut with a spoon. Nothing was added in the fridge, and not a drop of water left. So how did a runny liquid turn solid just by getting cold?
