Why does a pan of water boil at the same temperature every time in your kitchen?

Boil a pan of water today, tomorrow, or next year in the same kitchen, and the thermometer stops at the very same reading every single time. Turn the heat up higher and it does not get any hotter, it just bubbles more furiously. It is as if the water hits an invisible ceiling it cannot pass. What sets that ceiling?
